I finally got tired of eating the same thing day after day. Today, I made a lazy version of chana masala which turned out to be quite tasty. I'm not claiming that this is anything near authentic...after all, I'm better at baking than cooking. However, it is easy and doesn't require lots of clean up.
- 1 bottle PC Indian Tikka Masala Cooking Sauce
- 1 can red kidney beans
- 1 can chickpea
- 2 cups frozen green peas
- Drain the beans.
- Mix everything in a large container.
- Heat up individual portions in the microwave.
I know, I know, this is not much of a recipe but it does taste very good not to mention high in fibre. I ate mine with mini whole wheat pita pockets.
